Cozy’s Recipe for Alabama Biscuits

A Family Favorite at Thanksgiving or anytime of the Year.   Alabama Biscuits 1 Cup buttermilk, heated to lukewarm 1 Package of dry yeast 2 1/2 Cups flour 1/2 Teaspoon baking soda 1/2 Teaspoon salt 1/4 Cup sugar 6 Tablespoons (3/4 stick) butter, cut unto 1/4 inch slices. Dissolve the  yeast in the warm buttermilk.  Combine the dry ingredients in a bowl with a tight fitting lid.   Cut the butter into the dry ingredients until it is the size of peas.  Add the yeast and buttermilk, stirring well to form the dough.  Cover tightly and refrigerate at least 24 hours up to 4 days.  To bake, roll the dough to 1/2 inch thickness and cut with a biscuit cutter. Re-roll the scraps  and cut.  Melt 2 Tablespoons of butter in a 9 inch pie plate. Dip the biscuits in the butter, flip them over so that the top is coated and place them side by side in the pie plate. You can crowd them to fit into the plate.  Let rise 2-3 hours on the countertop and bake at 375F for 12 – 15 minutes. Check the center rolls for doneness.  Serve and enjoy! This can be mixed in a food processor.  Simply add the dry ingredients, mix and add the butter in pieces. Mix until the size of peas.  Add the yeast and buttermilk mixture and mix until uniform.
